Cocktail of the Week: Cranberry Jell-O Shots

Cranberry sauce? Oh, I thought you said cranberry SHOTS. Well, either way, shots are much more fun. In honor of Thanksgiving being only two weeks away, I thought I’d give you guys something fun to share with family and friends during the holiday of thanks. Because if there’s one thing I’m thankful for this year (besides my family and friends of course) it’s booze, and lots of it.
These Jell-O shots are a tad more sophisticated than the ones you took in college. The candied cranberries add a welcomed sweet and slightly tart punch at the end, and they add a bit of beauty to an otherwise immature looking concoction.
Ingredients for 18 servings
- 1 1/2 cups granulated sugar, divided
- 1 cup fresh cranberries
- 2 (3.4 oz) packets cranberry flavored Jell-O
- 1 cup vodka
Start by making the candied cranberries. In a medium saucepan over medium heat, combine 1/2 cup of sugar and 1/2 cup of water. Stir this mixture until the sugar dissolves completely. Let it cool for 20 minutes, then mix in cranberries until fully coated. Using a slotted spoon, move cranberries, tapping away any excess syrup, into a large resealable plastic bag. Add in remaining 1 cup of sugar, seal, and shake until cranberries are completely coated. Next, spread cranberries out on a baking sheet and refrigerate until they are cooled completely and the sugar hardens (approximately 25 minutes).
For the shots, bring 2 cups of water to a boil. Add in the Jell-O mix and whisk until its completely dissolved. Remove from heat and stir in the vodka and 1 cup of cold water. Let it cool for 2 to 3 minutes. Place 18 plastic shot glasses on a baking sheet and pour in the cooled Jell-O mixture until each glass is 2/3 full. Put them in the refrigerator to set for about 3 hours. Top each shot with 1-2 sugared cranberries and enjoy!
