Cocktail of the Week: Grapefruit Thyme Fizz

Since we’ll be springing ahead this weekend I figured a fun spring-inspired cocktail was appropriate. This delicious libation combines the fragrance of thyme and gin with the acidity of grapefruit and a slight touch of sweet from homemade simple syrup. You can easily batch this cocktail for large groups.

Ingredients for thyme simple syrup
1/2 cup water
1/2 cup sugar
2-3 sprigs of fresh thyme

Directions for thyme simple syrup
Bring sugar, water, and 2-3 large sprigs of thyme to a simmer in a small saucepan, until sugar is dissolved. Remove from heat and allow to cool.

Ingredients for cocktail
1 oz of thyme simple syrup
1 1/2 oz gin (I think Hendricks works best for this recipe)
1 1/2 oz grapefruit juice (only fresh will do)
Splash of club soda
Sprig of thyme for garnish

Directions for cocktail
Add thyme simple syrup, gin, and fresh grapefruit juice to a shaker and shake vigorously until fizzy, approximately 1 minute. Pour the mixture into a chilled coupe glass, top with a splash of club soda and a sprig of thyme. Enjoy!
